Italian Sausage Meatloa

Yield: 6 entrée servings

1 large egg
3/4 cup pizza sauce, DIVIDED
3/4 cup finely chopped onion
1 teaspoon minced fresh garlic
2 teaspoons dried oregano leaves
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 cup soft whole wheat bread crumbs (from 2 slices whole wheat bread, crusts removed)
1 pound Italian sausage, casings removed if necessary
1/2 pound ground beef or turkey (lean product preferred)

  1. Beat egg in a large mixing bowl. Add 1/2 cup pizza sauce and all the remaining ingredients. Gently mix, just until well blended - but do not overmix.
  2. Place in a loaf pan, approximately 9x5-inches and shape into a loaf, allowing 1/4-inch space around the edges of the pan. Press firmly to remove any air pockets. Bake in a preheated 350 degree F oven for 60 minutes.
  3. Remove from oven and drain meat loaf. Top with remaining pizza sauce and return to oven. Bake about 5 minutes more or until the internal temperature registers 165 degrees F in the center of the loaf.
  4. Remove from oven and let stand 5-8 minutes before slicing.
